On Thanksgiving, there's nothing as desirable as a home-cooked turkey right out of the oven. There's also nothing quite as undesirable as finding that your 20 pound bird cannot be cooked in time for the big holiday because your oven is working erratically, or not working at all. Thus, if your oven is heating food erratically, if it either burns or undercooks the food, it could be that there is something wrong with the oven's thermostat.
